Brinjals stuffed with masalas are always favorite side dish. This goes well with dal rice, curd rice and any non-spicy food. I like this stuffed brinjal fry more than the simple brinjal fry.
Even if you are not fan of brinjal dishes, you will surely like this stuffed brinjal fry.
The masala I prepared was sufficient for about 10 brinjals. But, I prepared brinjal fry with only 6 of them. I have stored the remaining masala in refrigerator and used later. Similarly, you can also prepare masala in advance and store in refrigerator, then use it within a week time.
This is very easy recipe and just that we have to be careful not to burn the brinjals while cooking.

Stuffed brinjal fry
Ingredients
- 6 Small Brinjals
- 2 tbsp Oil for frying
For Masala
- 2 tbsp Groundnuts
- 1 tbsp Channa dal powder
- 1 tsp Coriander powder
- 1 tsp Red chilli powder
- ¼ tsp Turmeric powder
- 1 tsp Cumin powder
- ¾ tsp Salt as per taste
- 2 tbsp Grated coconut
- 1 handful Chopped coriander leaves
- 2 tsp Oil
Instructions
To prepare masala
- Dry roast the peanuts.
- Dry roast channa dal powder for 2 minutes.
- Peel off the peanuts and crush to coarse powder using a mortar and pestle.
- In a mixing bowl, add crushed peanut powder, turmeric powder, red chilli powder, coriander powder, salt and cumin powder.
- Add roasted channa dal powder and grated coconut.
- Add 2 tsp oil gradually and mix together.
- Mix chopped coriander leaves as well.
- Slit the brinjal leaving its stem part holding it.
- Stuff the prepared spice mix in the brinjal.
- Add 2 tbsp oil in the preheated kadai.
- Toss in mustard and urad dal. Let it crackle. Add curry leaves.
- Place the stuffed brinjal in it.
- Saute by gently stirring it to cook all sides of it.
- Cover for 5 minutes and stir in between.
- Repeat it until the brinjal is cooked well.
- Take out and serve along with rice or any of your favourite meals.
