Amaranth stir fry | Mulai keerai Poriyal – How to cook it tasty & Health benefits

Amaranth leaves / Mulai keerai is healthy greens and it can be cooked tasty too. It has so many health benefits as well.

Amaranth is available in different color variations like pink, green and red.

This green leaves are easily grown in house gardens. During rainy seasons it starts growing automatically where it was there before due to the seeds fell over there.

At my native home, we have bit of gardening space in front of home, so mom takes care to plant it annually during rainy seasons.

Our opposite house aunt is very much fond of gardening and growing all kinds of natural herbs. So, getting organic greens back in my native was always easy.

Like most of the green leaves, this is also rich in vitamin and minerals.

Amaranth health benefits

Some of its health benefits are:

  1. Amaranth leaves are high in Vitamin A, thus helps for good eyesight.
  2. It is rich in essential phytonutrients and antioxidants, thus helps to reduce inflammations and refresh the body cells.
  3. It is very low in calories and fat. Some studies say that it is extremely beneficial for people with high-blood pressure and cardiovascular diseases.
  4. Amaranth /mulai keerai is rich in protein fiber content. So, it helps for good digestion and avoid constipation issues.
  5. As a well known fact, the green leaves are rich in iron. Amaranth leaves are too good source of iron. Thus it helps rid of anemia.
  6. It has more Vitamin C as well. Vitamin C and Iron are good combination for the absorption of both. So eating amaranth leaves often helps to improve your immunity and get rid of cough problems as well.
  7. Mulai keerai/Amaranth includes vitamin K, vitamin B, potassium and protein. So, it is healthy for human.
  8. As it is gluten-free, people with gluten-intolerance as well can have it.
  9. This is rich in calcium as well as protein; So the kids gain good growth if given regularly.

Here I have used green amaranth leaves to prepare the delicious stir fry. When I prepare this way, the kids too like it. As they usually turn away their faces for greens, I prepare it in this way to ensure they like and eat it.

Mulai keerai poriyal | Amaranth leaves stir fry

Ingredients
  

To Season

  • 1 tbsp oil
  • 1 tsp mustard and urad dal 
  • 1 tsp cumin
  • 1 handful curry leaves
  • 2 red chilli optional, depends on spice need
  • 1 tsp channa dal optional
  • 1 onion finely chopped
  • 1 tsp salt as required
  • 1 tsp ghee

To Grind

  • 1 or 2 Green chilli depends on spice need
  • 5 Garlic cloves
  • 1/4 cup chopped coconut pieces
  • 1 big bunch Amaranth / Mulai keerai or 2 small bunches

Instructions
 

  • Wash and clean the keerai / amaranth bunch. Then chop the stems and leaves into small pieces. Keep the chopped stems and leaves separately.
  • Heat the kadai add 1 tablespoon of oil. After the oil is heated add mustard and urad dal let the mustard splutter. then add curry leaves and cumin and saute for 30 seconds. 
  • Add the finely chopped onions and required salt. Search until the onions changes the colour slightly. Add ghee and continue sauteing until the onions are fried well.
  • Add finely chopped amaranth stems and cook for 2 minutes covering with the lid. 
  • Then add the leaves and cook covered for minute.
    Open and saute for 2 minutes.
  • Grind green chilli garlic and coconut pieces coarsely and add in the kadai and stir in for 2 minutes.
  • Now Mulai keerai poriyal / amaranth leaves stir fry is ready to serve.

Notes

Overcooking the stir-fry will make it very dry and nutritional values too get reduced. So cook it in right consistency and turn off the heat. 
After cooking, do not leave in heat kadai for long. Transfer to another bowl or container as soon as it is cooked.

  4. Grind green chilli garlic and coconut pieces coarsely and add in the kadai and stir in for 2 minutes.
