Dry roast the peanuts.
Dry roast channa dal powder for 2 minutes.
Peel off the peanuts and crush to coarse powder using a mortar and pestle.
In a mixing bowl, add crushed peanut powder, turmeric powder, red chilli powder, coriander powder, salt and cumin powder.
Add roasted channa dal powder and grated coconut.
Add 2 tsp oil gradually and mix together.
Mix chopped coriander leaves as well.
Slit the brinjal leaving its stem part holding it.
Stuff the prepared spice mix in the brinjal.
Add 2 tbsp oil in the preheated kadai.
Toss in mustard and urad dal. Let it crackle. Add curry leaves.
Place the stuffed brinjal in it.
Saute by gently stirring it to cook all sides of it.
Cover for 5 minutes and stir in between.
Repeat it until the brinjal is cooked well.
Take out and serve along with rice or any of your favourite meals.
