Madurai Special Kari Dosai

This is one of my favorite dish and most loved by many local residents in Madurai. The street food shop’s delicacy makes everyone hungry and drool just by thinking of it. If you have never tasted this dish, do try it yourself. Here is the recipe.

Required ingredients:

For Mutton Curry:

For seasoning:

Groundnut oil – 2 tbsp
Cloves – 4
Cardamom – 3
Star anise – 1
Cinnamon stick – 1/2 inch
Bay leaves – 2
Aniseed powder -1/2 tsp
Whole pepper – 1 tsp

Masala powders:

Turmeric powder – 1/2 tsp
Chilli powder – 1 tsp
Coriander powder – 1 tsp

Mutton flesh without bone – 250g
Curry leaves – few strands
Green chilli – 2
Onion – 2
Shallots – 6
Ginger and garlic – 2 tsp crushed
Tomato – 1
Grated coconut – 2 tbsp (optional)
Salt – as required
Coriander leaves

For Kari Dosa:

Finely chopped onion – 1/2 cup
Egg – 1
Dosa Batter

Preparation Method for mutton curry

  1. Heat Kadai and add oil.
  2. Add all ingredients mentioned under seasoning.
  3. Add onion and fry until onion turns transparent.
  4. Add ginger and garlic and fry till raw smell goes off.
  5. Add mutton and fry for 5 minutes.
  6. Add all masala powders, tomato, curry leaves, green chilli and fry for 3 minutes.
  7. Add 1 cup water and mix.
  8. Pressure cook until the mutton cooks well. Generally 6 to 8 whistles would be enough.
  9. Once mutton is cooked, let it simmer to make it thick consistency.
  10. Add grated coconut if you use and mix well.
  11. Add coriander leaves and mix.

Tips:

  • You can use mutton without bone or after cooking the mutton, you can remove bones and cut the mutton into small pieces.
  • Make sure that the mutton curry thicker than normal gravy which we use for rice or chapathi.

Preparation method for Kari Dosa:

  1. Add 1 egg, 2 tbsp chopped onion and whisk well.
  2. Now add 1/2 cup mutton curry into it and whisk again.
  3. Mutton curry should be at least tribe quantity of egg.
  4. Now heat Dosai kadai / tawa and brush it with little oil.
  5. Pour 1 ladle of dosa batter and spread it like its done for uthapam.
  6. Now pour 1 ladle of mutton, egg and onion mix and spread it on top of dosa.
  7. Cook for 2 minutes and flip the other side carefully.
  8. Cook for 3 minutes and take it to plate.

Serve hot. This does not require any chutney. You will enjoy kasi dosa’s unique taste for sure.
