Vendaikai / Bhindi Masala

The ladies finger is nutrient rich vegetable which is packed with vitamins and minerals. It is also source of antioxidants. There are lot of ways to cook this healthy vegetable. Here, we will see how to make it as thick gravy which goes well with chapathi and can be used as side dish for rice.

Required ingrediants:

Ladies finger / Vendaikai / Okra – 500g chopped
Oil – 3 tbsp
Curry leaves – few strands
Onion – 1 chopped roughly
Mustard urad dal – 1 tsp
Cumin seeds – 1/2 tsp
Omam / Ajwain / Carom seeds – 1/2 tsp
Asafoetida – 1/4 tsp
Tomatoes – 2 finely chopped
Raw mango – 1 tbsp finely chopped (or) Lemon – 1
Ginger garlic paste – 1 tsp
Salt -as required
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – 1/4 tsp
Nutmeg powder – 2 pinch
Thick cream or yoghurt – 1/3 cp
Sugar – 1 tbsp (optional)
Garam masala – 1/2 tsp

Preparation Method:

  • Heat kadai and add 2 tbsp oil.
  • Add curry leaves, chopped onion and fry for 2 minutes.
  • Add chopped ladies finger and fry well until it is not sticky. Keep aside.
  • Add 1 tbsp oil in kadai.
  • Add mustard urad dal for tempering.
  • Add cumin seeds, carom seeds and asafoetida.
  • Add raw mango slices and ginger garlic paste.
  • Add finely chopped tomatoes and fry for couple of minutes.
  • Add red chilli powder and fry until raw smell goes off.
  • Add coriander powder, turmeric powder and nutmeg powder and saute for 2 minutes.
  • Add 1/2 cup water and cook until masala smell is goes off.
  • Add thick cream / yoghurt and mix well, then bring to boil.
  • Add fried onion / ladies finger and cook covered for about 5 minutes, until vegetable is soft.
  • Add garam masala and cook for couple of minutes and turn off the heat.

  13. Add fried onion / ladies finger and cook covered for about 5 minutes, until vegetable is soft.
  14. Add garam masala and cook for couple of minutes and turn off the heat.
