Biryani is one of the most loved flavourful food on earth. I love food and when it comes to biryani, I become a real foody 🙂
This fish biryani brings back my olden days memory. I have always heard and had chicken biryani and mutton biryani from many restaurants when I was a spinster.
Cooking was never a part of day-to-day business those days as I spent days in hostels. So, always we end up going to restaurants when I was in Chennai. But I have not had fish biryani there.
The first time I had fish biryani was in Muscat. There was a restaurant named “hot-pot” in Darsait just next to my hotel apartments. Until I started my own cooking experiments, I had most of my meals from this restaurant only.
The fish biryani there was just awesome. The best ever fish briyani I would say. They usually make briyani with Hamour fish. It is soft and has less bones. Always they fry the fish with some spice coatings and add in biryani.
The love for fish biryani started from there. Even then, until I was there, I had never tried to cook fish biryani on my own, as I had best option of going to hot-pot restaurant.
After I started learning cooking, biryani is one of my target food to learn. With my trials and errors, I like the fish briyani in the form of fried fish biryani than cooking the fish directly with masalas.
I adopted the same method of hot-pot fish biryani, just that I use whichever meaty fish available whenever I make fish biryani. But this time I used the hamour fish only. I am sure you will also like this fish biryani.

Fried fish Dum biryani
Ingredients
- 1 cup Basmati Rice
For Fish fry
- ½ tsp Turmeric powder
- ¾ tsp Salt
- 1 tsp Red chilli powder
- 1 tsp Coriander powder
- 1 tsp Ginger Garlic paste
- 1 Lemon juice
- 1 tsp Corn flour
- 500 g Hamour fish
- Oil for frying
Spices for seasoning
- ½ Jadhipatri flower
- 1 or 2 Black cardamom
- 4 Cloves
- 1 Star anise
- 1 inch Cinnamon stick
- 2 Bay leaves
- 1 tsp Aniseed
- 3 Green Cardamom
- ½ tsp Whole pepper
- 1 tsp Fennel seeds
For Biryani preparation
- 2 tbsp Oil
- 1 tbsp Ghee
- ¼ cup Yoghurt / Curd
- 1 Big Onion or 2 medium onions, sliced
- 1 tbsp Ginger Garlic paste
- 1 ½ tsp Red chilli powder This will be spicy, if you want less spicy, you can adjust chilli powder
- 1 handful Coriander leaves finely chopped
- 1 Tomato Chopped
- 1 tsp Salt adjust as per taste
- 1 tsp Coriander powder
- 1 handful Mint leaves finely chopped
Instructions
Marinate the fish
- In a bowl, add turmeric powder, salt, red chilli powder, coriander powder, ginger garlic paste, lemon juice and corn flour mentioned under "For Fish fry".
- Mix all of these spices together and make a masala paste.
- Apply this masala paste on each fish pieces and marinate for 30 minutes at least. If time permits, you can marinate it for up to 2 hours also.
Soak Rice
- Wash the Basmati rice and soak it for 30 minutes. If you use new rice, just 10 minutes of soaking is enough.
Biryani Rice Preparation
- In a cooking pot / pan, add 2 tbsp oil and 1 tbsp ghee.
- Add all spices mentioned under "Spices for seasoning"
- Add sliced onions and saute until its turns slightly brown.
- Include 1 tbsp ginger garlic paste and saute until its raw smell goes off.
- Add red chilli powder, coriander leaves and saute well.
- Add chopped tomatoes and saute until its mashed.
- Add coriander powder, salt and yoghurt. Mix well.
- Add soaked rice and 2 cups of water.
- Cover and place some weight on lid, so that the flavors doesn't escape. Once the water started boiling, reduce the flame to very low and cook for 10 minutes.
Fry the fish pieces
- While the rice is cooking, fry the fish in medium flame. It will take 10 minutes to fry the fish pieces.
Make Fish Dum Biryani
- By the time we finish frying the fish pieces, the rice would be cooked. Turn off the heat now.
- Gently fluff up the biryani rice.
- Transfer the fried fish pieces to biryani rice and sprinkle some coriander leaves.
- Place some weight on the lid and leave it like that for 15 minutes minimum or until you are ready to serve.
- Serve hot with yoghurt raita or your favorite gravy.

Notes
- Soak the rice for minimum 30 minutes to 1 hour time if the rice is old rice.
- If the rice is new rice, then it will get cooked fast. So if new rice, soak just 10 minutes before adding the rice.
- Rice to water ratio is 1:2. 1 full cup rice is the measure without leveling. 2 cups of water is added. This rice and water ratio is perfect for any pulao or biryani in pot cooking method. (no pressure cooker is used here)
- Check the salt and spice taste after adding water. It should be little more than your taste. So that it will be correct when the rice is cooked fully.
- Gently fluff up and mix the rice after it is cooked to avoid breaking.
- Finally, you can serve it along with any gravy of your choice or with yoghurt chutney.

7. Then add sliced onions and saute until its turns slightly brown.
8. Include 1 tbsp ginger garlic paste and saute until its raw smell goes off.
9. Add red chilli powder, coriander leaves and saute well.
10. Include chopped tomatoes and saute until its mashed.
11. Add coriander powder, yoghurt and salt and mix well.
12. Now add soaked rice and adjust salt.
13. Add 2 cups of water.
14. Cover and place some weight on lid, so that the flavors doesn’t escape. Once the water started boiling, reduce the flame to very low and cook for 10 minutes.
Fry the fish pieces

Make Fish Dum Biryani
16. By the time we finish frying the fish pieces, the rice would be cooked. Turn off the heat now.
17. Gently fluff up the biryani rice.
18. Transfer the fried fish pieces to biryani rice and sprinkle some coriander leaves.
19. Place some weight on the lid and leave it like that for 15 minutes minimum or until you are ready to serve.
20. Gently fluff up the rice along the corners and serve.
21. Serve hot with yoghurt raita or your favorite gravy.
