Veg Pasta with white sauce

Pasta has become an all time favorite food for me and all at home. How can we not make our favorite food at home? As we all know, homemade food is always far better and healthy than the restaurant bought.

Restaurant style homemade pasta is well received and enjoyed a lot at my home. I hope this will be the case with you too.

The white sauce for the pasta is key ingredient that gives the creamy texture and flavor which most people love. But the restaurants use all-purpose flour to make white sauce, which I differ in my recipe. I try my best to avoid white all-purpose flour usage at my home.

Creamy white sauce pasta video recipe:

I enjoy all kinds of pasta, especially the one with chicken pieces and little more spices along with creamy sauce. But, with this pasta recipe, I have used vegetables of my choice, as I wanted to make pure vegetarian for this season.

You can always see what works out well for your family. I have prepared white sauce separately and then mixed it with macaroni.

Alternatively, you can add the milk along with veggies while making pasta along with some cream and cheese. But that’s going to be totally different procedure.

Here I will show you how to prepare white sauce which you can store in refrigerator for 3 days and mix it with pasta as and when you require.

Required ingredients:

Oil1 tbsp
Button mushrooms100g, sliced
Garlic cloves3, finely chopped or crushed
Red pepper1 small, sliced
Broccoli5 pieces, chopped
Red chilli flakes1 tsp or as per your taste
Salt as required
Macaroni1 cup
Spring onions1 tbsp, finely chopped
Pasta ingredients
Whole milk 500ml
Onion 1
Cloves6
Butter 35g
Wheat flour35g
White sauce ingredients

Preparation Method of white sauce pasta

  • In a pan, add 2 cups of water and bring it to boil. Add macaroni and cook until it is soft. Drain the excess water using a colander and keep cooked macaroni aside.

While the macaroni is cooking, we can prepare the white sauce.

  • Take an onion and pierce it along the sides using the toothpick and insert a clove in each pierce.
  • In a pan, heat milk and add cloves inserted onion and bring the milk to boil. The flavor of cloves and onion is dissolved in milk. Take out the onion and discard it. Transfer the milk to another container.
  • In a small pan, add butter and wheat flour and mix well by slowly heating it up, until it forms paste consistency without lumps.
  • Transfer this wheat butter paste to milk pan and stir in the milk little by little.
  • Keep stirring until you add all the milk without any lumps.
  • Once you reach the desired consistency, turn off the heat. White sauce is ready. Keep aside.

Pasta Preparation:

  • Heat a wok or pan, add oil. Once the oil heated, add spring onions, mushroom and garlic and sauté well.
  • Then add broccoli, red pepper, salt and red chilli flakes. Saute until veggies are little softer.
  • Now add the cooked macaroni and mix along.
  • Now add the white sauce that we prepared and mix well with pasta to make it creamy as you require.
  • Creamy white sauce pasta is ready to serve.

Tip 1 – You can add some finely chopped Dill leaves as toppings.

Tip 2 – You can make white sauce alone store it up to 3 days in refrigerator and use whenever you make pasta within that days.
