Vegetables Noodles Soup – Kids favorite & Diet food
Veg noodles soup has become everyone’s favorite these days. Its got all the healthy vegetables and tasty too.
The comfort of making this soup is that you can add any vegetables you like and leave what you don’t have or like. If you don’t have all vegetables, you can make this soup with just mushrooms and cucumber alone.
Kids are always fond of noodles. All those influencing mediums like TV ads made them feel it is the super yummy food. My little toddler gets excited to see anything that looks like noodles even before eating. So, I can use rice noodles (Idiyappam – steamed rice noodles which is healthy than the readymade store bought one) whichever recipe calls for noodles.
Even in this recipe too, you can use any type of noodles that you like or have. For example, you can use rice noodles, vermicelli, or maggi noodles. This can be used as diet food as well for those who want to avoid heavy for dinner.

Vegetable Noodle Soup Recipe
Required ingredients:
For 4 servings:
Oil – 2 tbsp
Spring onion – 1 tbsp , finely chopped
Garlic – 5 cloves, finely chopped
Mushroom – 5 to 6
Carrrot – 1
Noodles – 1/2 cup
Cucumber – 1
Zucchini – 1
Broccoli – 3 pieces
Green chilli – 2, broken into half
Soy sauce – 1/2 tsp
Salt – as required
Pepper powder – 1/2 tsp or as required
Lemon juice – 1 tsp or as required
– Chop all vegetables into semi circle shape.
Preparation Method:
- Heat the iron kadai and add oil.
- Add chopped spring onion and garlic and saute for 30 seconds.
- Add mushrooms along with some salt and saute until it is semi cooked, or until you see it started watering out.
- Add carrot and saute for a minute.
- Now add 4 cups of water and bring it to boil.
- Add broken noodles and cook until noodles is done.
- Then add all the remaining vegetables and salt as required.
- After it is boiled for 2 minutes, turn off the heat.
- Serve hot by sprinkling some pepper powder and lemon juice as per your taste.

- Chop all the vegetables as shown in the picture and prefer iron kadai if you have one.
- Heat the kadai and add oil.
- Add chopped spring onion and garlic and saute for 30 seconds.

- Now add 4 cups of water and 2 green chilli broken into 2 pieces. Bring it to boil.
- Add broken noodles and cook until noodles is done.
- Then add all the remaining vegetables and salt as required.
- After it is boiled for 2 minutes, turn off the heat.
- Serve hot by sprinkling some pepper powder and lemon juice as per your taste.
