Healthy Apple cookie cake recipe with step-by-step pictures and video on how to make apple cake without sugar, butter and oil.

This apple cookie cake recipe as I have named it, is very crunchy bite to munch on the outside and soft inside with the goodness of apple and eggs.

I did not have any idea that I can bake cookie like cake with apples until I did this one. This recipe was created incidentally as I had fully ripened apples at home and no one was ready to eat it on that day.

I felt it may get spoilt if I leave for another day. So, I thought why not prepare something with this apple in a way everyone likes it.

Then I started preparing this. I did not want to add sugar to this as every cake baking calls for sugar and we end up adding more sugar in our regular diet.

That’s the reason I purposely added jaggery to this. If you prefer you can replace jaggery with sugar, or palm sugar or any sugar of your choice.

I did not add oil or butter to it for the same reason of making it healthier. But, I am telling you that this tasted too good and got over within 10 minutes after unmolding this apple cookie cake.

Apple Cookie cake Recipe

Healthy apple cake without sugar, oil or butter.

Equipment

  • Cake tin
  • Parchment paper to line the cake tin

Ingredients
  

  • 2 Eggs
  • 1 Red Apple
  • ½ cup Jaggery you can add more if you like it sweeter
  • ½ cup Wheat flour / All-purpose flour You can use any of it, depending on your preference
  • ¼ tsp Baking soda
  • ½ tsp Baking powder
  • 1 pinch Salt
  • 1 tbsp warm milk
  • ½ tsp oil for greasing cake tin

Instructions
 

  • Pre-heat the oven for 180 degree celsius.

Prepare cake butter

  • In a mixer, add 2 eggs and jaggery. Grind without lumps.
  • Transfer this mix to a mixing bowl.
  • Add flour, baking soda, baking powder, salt and whisk well.
  • Whisk until there are no lumps.
  • Add warm milk for adjusting the required the batter consistency.
  • Grease the cake tin and place parchment paper and grease again.
  • Pour the prepared cake batter into cake tin.

Add apple to cake batter

  • Wash and clean the apple.
  • Slice the apple into thin lengthy pieces.
  • Place these apple pieces vertically on the cake tin on top of the cake batter.

Bake

  • Place the cake tin in pre-heated oven and bake for 40 minutes in 180 degree celcious.
  • After, it is baked allow it to cool for 10 minutes. Then unmould the cake.
  • Slice into small pieces and enjoy this apple cookie cake.

Notes

  1.  Baking time may vary from 30 to 45 depending on the oven and size of the cake tin. If you use wider cake tin, the cake will be baked faster. So, adjust the baking time as per your oven and tin. You can open and check by pricking in it after 30 minutes. 
  2. I have not used sugar for this apple cookie cake as I wanted to avoid it. I preferred jaggery over sugar as it is healthier and it will not be too sugary. 
  3. If you want, you can add sugar. If you add sugar, adjust sugar. 1/3 cup of sugar will give you mild sweet of 1/2 cup of jaggery; if you want more sweeter, add 1/2 cup sugar.
  4. I have not added butter or oil in this cake; yet it came out perfectly crunchy and tasty.
