Crispy Adai Dosai – A protein rich food

Adai Dosai is one of the most famous south indian dish. It is protein rich food. Whenever I think of Adai Dosai, mom’s memory flashes. She makes it at least once in a week. The aroma of all toppings and crispness makes me crave for it. The total credit goes to my mom for this recipe and we always loved it along with some jaggery or coconut chutney.
Required ingredients:
To soak and Grind:
Yellow Channa dal – 1/3 cup
Toor dal – 1/3 cup
Moong dal – 1/3 cup
Yellow split peas -1/3 cup
Idly rice – 1/3 cup
Urad dal – 1/4 cup
Red chilli- 2 to 3
Ginger- 1 inch
Garlic cloves – 10
Cumin – 1 tsp
Fennel seeds – 1 tsp (optional)
Oil for making dosa
Salt – as required
To add in the batter:
Onion – 1 medium chopped
Grated coconut- 1/3 cup
Curry leaves
Coriander leaves
Preparation Method:
- Add all ingredients mentioned under “Soak and grind” in a vessel and wash once.
- Add water and soak it for about 5 hours.
- Grind in a wet grinder or mixer grinder.
- Take the ground batter in a vessel.
- Add required salt, chopped onion, grated coconut, chopped curry leaves and coriander leaves.
- Heat the pan and apply some oil slightly on the pan.
- Pour dosa batter spreading it thin.
- Cover with lid and cook for 2 minutes.
- Take out Dosa and serve hot along with your favorite chutney.
Tip 1: I usually soak it just before going to bed in the night, so that I can grind it and use for breakfast.
Tip 2: If you grind in mixer grinder, grind it in 2 batches in a big jar. So, it will be ground smoothly.
Tip 3: If the batter consistency in thin, then Dosa will be crispy. If batter consistency is thick, the Dosa will be soft and filling.
