Ginger Chutney | Inji Thuvaiyal | Allam Pachadi is well known Andhra special spicy dish. It is one of the best immunity booster. Including this chutney in regular diet boosts our immunity, prevents cold and flu. It increases the appetite. I love the taste of Ginger chutney. As palm jaggery is added to this chutney, we dont feel it that spicy and tastes yummy. You can have this chutney with ghee rice, Idly and Dosa as well.
Ginger chutney recipe
I present the Ginger chutney in the way we prepare here. This is Andhra based recipe and it is going to be really spicy.
Required Ingrediants:
vegetable oil – 1 tbsp
Tamarind – half small lemon size
Ginger- 100g cleaned and chopped
Coriander seeds – tbsp
cumin – 1 1/2 tsp
jaggery – 2 tsp. you can add little more if you prefer.
Garlic cloves – 12
Red chili – 3 to 5 for grinding. you can add more or less as per your taste.
mustard urad dal – 1 tsp
red chilli – 2 for seasoning
curry leaves- few strands
Preparation Method:
- Take tamarind in a small bowl and add little water.
- Heat Kadai and Add a tsp of oil.
- Add coriander seeds in it and fry for a minute.
- Add cumin seeds now, fry another minute.
- Add Red chilli which we measured for grinding and fry.
- Add Garlic cloves and fry all for a minute.
- Take out all the above fried ingredients in a plate and let it cool.
- Add cut ginger pieces in the same kadai and fry.
- Add the required salt in it and fry.
- Let this ginger to cool down.
- Coarsely grind fried coriander seeds, cumin, garlic, red chilli.
- Add jaggary, ginger and tamarind along with little water.
- Grind all to a paste.
- Heat Kadai and add 2 tsp oil.
- Add mustard and urad dal, let it splutter.
- Add curry leaves, red chilli cut into pieces and fry for a minute.
- Add the ground ginger paste in it and mix well.
- Turn off the flame.
Tip 1: If you have added more water in ginger while grinding, then you need to cook for a while after seasoning to reach the desired consistency.
Tip 2: You can store outside temperature for 2 days. If you store it in glass container, it stays good for more than a week time.
Tip 3: As I said before, it is going to be really spicy. If you do not want more spicy, either you can reduce red chilli or add more jaggery.
Tip 4: If you still think you can not handle the spice, you can add fresh coconut pieces about 1/4 cup and grind along with ginger.
