Ripe banana appam | Vazhaipazha paniyaram
Paniyaram is one of the traditional recipe in south india. Often this sweet paniyaram is made during the festivals and for offerings. Adding ripe banana to it makes it more tastier and flavorful.
Whenever the banana is over-ripen, it may not be that tasty to have as it is. But it makes this sweet delicacy more delicious, tasty and healthy.
Required Ingredients:
Overripe Nenthiram (kerala) banana – 2
Jaggery – 1/2 cup
Rice flour (idiyappam flour) – 1 cup
Wheat flour – 1/2 cup
Baking soda – 2 pinch
Cardamom – 4 Salt – 2 pinch
Coconut grated – 2 tbsp (optional) or fried coconut pieces.
Ghee – 1 tsp
Oil – for frying
Preparation Method:
- Peel and cut the banana into small pieces and grind to paste.
- Take jaggery in a pan and add 1/4 cup water and melt.
- Crush the cardamoms and you can add peels in jaggery while melting it.
- In a bowl, add banana paste, rice flour, wheat flour, crushed cardamom, baking soda and grated coconut.
- Add filtered jaggery water in the bowl and mix well.
- Add ghee and mix by adding water little by little until you reach desired consistency.
- Heat Paniyara kadai and add more oil.
- Pour the prepared batter on each mould and cook for 2 minutes.
- Flip to other side and cook for another couple of minutes.
- Once all sides are fried, you can remove and serve.
Tip: While storing, wait until the dish becomes cold and then store in a container. This would help keep the dish crisp at the outer and soft inside.
