Sardines fish fry recipe with ginger garlic masala.

- 500 g Sardines fish | Mathi meen
To Grind and make paste
- 2 Green chilli adjust as per your spice level
- 2 inches Indian Ginger
- 10 cloves Native indian garlic
- 1 Lemon juice
Spice and powders
- 1 tbsp Rice flour
- 1 tsp Corn flour
- ¾ tsp Salt as per taste
- ½ tsp Turmeric powder
- ¾ tsp Pepper powder you can adjust as per taste
Grind and make paste
In a mixer jar, add green chilli, ginger, garlic and lemon juice and grind to paste. You can add few drops of water to grind it to fine paste.
Make Fry masala
Transfer the ground paste to mixing bowl, then add salt, turmeric and pepper powder.
Further add rice powder and corn flour. You can adjust corn flour quantity to make the masala paste sticky.
Marinate the fish if time permits
You can marinate the fish pieces with this masala coating from 30 minutes to 2 hrs if you have time.
I have not marinated this time, I fried it straight after applying masalas.
Fry the fish pieces
Add required oil in a preheated skillet to shallow fry the fish pieces.
Once the oil is medium hot, add fish pieces one by one.
Flip and fry on both sides of fish.
Transfer to a plate and drain the excess oil on kitchen towel.
Garnish with fried curry leaves and lemon to squeeze.
Serve hot.
- The ginger garlic paste for this masala is mandatory to ward off the too much fishy smell from sardines.
- You can adjust chilli and salt as per your spice requirement.
- Similarly, either rice or corn flour you can add to adjust water consistency to make sticky paste.
