Tutti-fruitti Recipe

The colourful, flavorful tutti-fruities are always eye-catchers in bakery snacks. Let's make it at home.

Ingredients
  

  • 500 gram Raw papaya
  • 1 cup Sugar
  • 1 tsp Vanilla extract
  • 1 tsp fruit flavor extract
  • 1 to 3 food colors

Instructions
 

  • Peel off the papaya skin, clean and remove the inner seeds if any.
  • Chop the raw papaya into very small pieces.
  • In a pan add papaya pieces and water. Boil it for 5 minutes. It should be semi-cooked.
  • Drain the water and set papaya pieces aside.
  • In a pan, add 1/2 cup sugar and little water then bring it to boil.
  • Then add semi-cooked papaya pieces and cook. Add another 1/2 cup sugar and let it cook until the sugar comes to 1-string consistency. That is, until a single thread is formed (without breaking) with sugar syrup when you pull apart forefinger and thumb finger gently.
  • Drain the papaya pieces and split them into 3 to 4 bowls as per your need of colour or flavor.
  • Add colors and flavors in each bowl and let it sit at least for 3 hours or leave it over-night for the flavors to get absorbed well.
  • After that drain it in kitchen-tissue and let it dry for 12 hrs or until it is completely dry.
  • Now tutti-fruity is ready and you can store it in refrigerator in air-tight container for months to use.

Notes

Tips: 
  1. First, if the raw papaya gets cooked fully, it will become soft and you won't get crisp tutti-fruitti. To get it perfect, it should be drained when it is semi-cooked.
  2. For flavors, i added vanilla extract in 1 bowl and pineapple extract in another bowl. In remaining 2 bowls, I added food colours. When all of it gets mixed after they are dried out, you will get nice flavor.
  3. You can try your own choice of flavors and colors too.
