Peel off the papaya skin, clean and remove the inner seeds if any.
Chop the raw papaya into very small pieces.
In a pan add papaya pieces and water. Boil it for 5 minutes. It should be semi-cooked.
Drain the water and set papaya pieces aside.
In a pan, add 1/2 cup sugar and little water then bring it to boil.
Then add semi-cooked papaya pieces and cook. Add another 1/2 cup sugar and let it cook until the sugar comes to 1-string consistency. That is, until a single thread is formed (without breaking) with sugar syrup when you pull apart forefinger and thumb finger gently.
Drain the papaya pieces and split them into 3 to 4 bowls as per your need of colour or flavor.
Add colors and flavors in each bowl and let it sit at least for 3 hours or leave it over-night for the flavors to get absorbed well.
After that drain it in kitchen-tissue and let it dry for 12 hrs or until it is completely dry.
Now tutti-fruity is ready and you can store it in refrigerator in air-tight container for months to use.
