Squid and Vegetables Salad

Ingredients
  

  • 100 g squid cleaned
  • 3 button mushroom chopped
  • 1 carrot chopped 1 inch lengthwise
  • 10 beans chopped 1 inch lengthwise
  • 1 stem celery chopped 1 inch lengthwise
  • 1 cucumber chopped 1 inch lengthwise
  • 1 tbsp spring onion finely chopped
  • 1/2 flower broccoli chopped
  • 1 capsicum chopped 1 inch lengthwise
  • 2 tsp Vegtable oil
  • 1 tbsp olive oil
  • 1 lemon
  • 1 tsp oregano
  • 1 tsp pepper powder as required
  • 1 tsp salt as required
  • 4 cloves
  • 1/2 inch cinnamon stick
  • 1/4 tsp cumin powder
  • 1 handful parsley finely chopped
  • 1 handful coriander leaves finely chopped

Instructions
 

Wash and cut squid and vegetables

  • Take all vegetables as chop all of them in uniform length and same way clean and cut the squid too.

Make Salad

  • Heat kadai, add vegetable oil. After oil is heated add cloves and cinnamon stick.
  • Add squid pieces, cumin powder, 1/2 tsp pepper powder and 1/4 tsp salt. Saute for 3 minutes.
  • Add chopped beans, mushroom, spring onion, broccoli, capsicum and celery. Cover and cook all in low flame for 5 minutes stirring in between.
  • Turn off the flame and then add cucumber, carrot, parsley and coriander leaves.
  • Squeeze the lemon juice, sprinkle the oregano, 1/2 tsp pepper and 3/4 tsp salt or as per your taste.
  • Mix them all together, sprinkle the olive oil and serve.
